Valentine’s Mashed Potatoes

Looking for a festive side dish this Valentine’s day?

“We’ve got you covered!”

It is rumoured that Saint Valentine himself developed this recipe, I may have something to do with the formulation of that rumour but sure, how else was I supposed to title this recipe?

D was going to leave this out, suggesting that anyone with red mashed potatoes on their mind could find a way to make it. Where there’s a will and all that. But I insisted that it deserved an article of its own, it just looked too adorable(especially on the kids plates) and it’s not too out there for the Irish taste palate. Let’s face it, we were all raised on mash and overcooked broccoli, and tradition stays close to our hearts.

In this recipe D has diversified the nutritional profile and presentation of “mash”, making it that special touch needed at any great Valentine’s day feast.

Valentine's Mashed Potatoes

  • Servings: 4
  • Difficulty: Easy Peasy

Ingredients

  • 4 Large Potatoes, peeled and diced
  • 1 Beetroot, peeled and diced
  • 1 Red Pepper, deseeded and diced
  • 4 Cloves of Garlic
  • 150ml Water
  • Salt and Pepper to Taste

Directions

  1. In a medium saucepan, cover the Potatoes with water, bring to a boil, reduce heat and cook until the Potatoes are soft.
  2. Meanwhile, add the raw Beetroot, Red Pepper, and Garlic to a blender. Blend until smooth and completely liquified (it’s okay to add more water, if you need to).
  3. Pour the Beetroot mix into a small pan and reduce, over a low heat, until most of the water has evaporated.
  4. When the Potatoes are ready, drain off all of the water, add the Beetroot reduction and mash until smooth!

    sounds lovely, especially garlic! I’d just probably add to potatoes red food colouring and not bother with beetroot, so it’s nice to see it, and I’m glad you decided to add it 🙂
